Almond Samsa: Crispy Puff Pastry Treat with Honey

Ingredients:
For the dough:
- 3 measures of flour
- 1 measure (not full) of melted butter or smen
- 1 pinch of salt
- A little vanilla
- Water and orange blossom water, to bind
For the filling:
- 1 measure of ground almonds
- 1/2 measure of walnuts or hazelnuts (as you prefer)
- 1/4 measure of sugar
- Orange blossom water, to moisten
For finishing:
- Oil, for frying
- Warm honey, for dipping
Instructions:
- Mix the flour, melted butter or smen, salt, and vanilla. Gradually add water and orange blossom water to form a smooth dough.
- Prepare the almond and nut filling, mixing ground almonds, nuts, sugar, and a little orange blossom water.
- Roll out the dough and cut into triangles. Place a spoonful of filling in the center of each triangle and fold to seal.
- Arrange the triangles on a tray. Heat oil in a pan until hot but not smoking.
- Fry the samsa triangles until golden brown and crisp.
- Remove from oil and immediately dip in warm honey, coating each piece.
- Let cool slightly, then serve with tea or coffee.
Tips:
- Using triyah dough (well-rested dough) helps create the signature air bubbles in the pastry.
- Fry in batches to ensure even cooking and crispiness.
